Unpossible Mead, Illinois’ newest meadery, hosted its grand opening on Aug. 3 at its tasting room in Dwight.
CEO and Mead Maker, Brian Galbreath released four new bottled meads at the opening; Strawberry Forager, Blackberry Forager, Blender Berry and Obstinate.
Eight meads in total were available on draft. Flights, individual tastings, glass pours and bottles were served.
Mead is fermented from honey, according to the American Mead Makers Association, and is the oldest alcoholic beverage known to man. It predates beer and traditional grape wine by thousands of years
“I love exploring different varietals of honey,” Galbreath said in a news release. “Honey is a lot like grapes, there are different colours and flavours.
"Making mead is a lot like cooking in that each honey can be layered with different fruits and spices to make amazing meads. I am excited to have folks come out and try the different flavours."
Galbreath has been fermenting cider and mead since 2013. In 2016, he won first place in the open category for an oak aged cherry mead as a homebrewer at the Mazer Cup International Mead Competition, the largest mead only competition in the United States.
The win at this competition set the wheels in motion to open Unpossible Mead.
Bottles from Unpossible Mead can be found at select retailers in Cook, Will, Grundy, and Livingston counties. Meads can also be found on tap at bars in Chicagoland, Northern and Central Illinois.
Galbreath was born and raised in Coal City where he currently resides with his wife and son. He is a 2002 graduate of Coal City High School and a 2006 graduate of Southern Illinois University.
He is an Eagle Scout and has farming in his blood. He is working towards returning to agriculture with the future plans of growing an orchard.
